Ingredients
1 lb. pork tenderloin, trimmed and cut into thin strips
nonstick cooking spray
1 onion, thinly sliced
1 jalapeno, seeded and chopped
1/2 cup chicken broth
1 medium tomato, chopped
3 Tbsp.- 1/2 cup cilantro, depending on your preference
3 Tbsp. lime juice
6-8 corn tortilla, warmed
3 bean corn salsa with Avocado (optional)
Directions
Heat large skillet to medium-high and spray with nonstick cooking spray. Sprinkle pork slices with pepper. Cook until browned, about 4 minutes.
Remove pork from pan, drain excess liquids from pan. Add onion and jalapeno, saute 5 minutes, or until tender.
Add broth. Reduce heat and simmer 1 minute, scraping pan to loosen brown bits.
Add tomatoes to pan, simmer 2 minutes.
Return pork to pan. Stir in cilantro and lime juice. Cook 1 minute, or until pork is cooked through.
Serve on warmed corn tortillas. Enjoy!
Can also be served with 3 bean corn salsa with avocado.
