Crock pot time: 4-8 hours
Serves: 6
Ingredients
2 lb boneless pork sirloin roast
pepper
cooking spray
1 cup chicken broth
1/2 cup soy sauce
1/3 cup balsamic vinegar
3 Tbsp. sugar (I used Splenda)
1 tsp. sesame oil
pinch of red pepper flakes
1/2 tsp. Chinese five spice
3 cloves of garlic, minced
1 Tbsp. fresh grated ginger
8 oz. mushrooms
1 cup spinach
Directions
Season pork with pepper on all sides. Heat skillet to medium-high heat. Spray with cooking spray. Brown pork on all sides, about 7-8 minutes.
In crock pot, combine broth, soy sauce, vinegar, sugar, sesame oil, pepper flakes, Chinese five spice, garlic and ginger.
Add pork to crock pot.
Cook on high 4 hours or low 8 hours. Remove pork from crock pot about 30 minutes before the time is up. Add mushrooms and let cook 30 minutes.
Shred pork.
Place pork and spinach in crock pot. Stir to combine. Can be served over rice or noodles. Enjoy!
