Total Time: 6 hours

Ingredients
1/2 cup chopped onion
1/2 cup water (recipe says you can use beer)
2 Tbsp. tomato paste
1 lb. pork tenderloin
1 (1.25 oz.) package taco seasoning
1 jalapeno pepper seeded and chopped
2 Tbsp. chopped fresh cilantro
1 can of black beans, drained and rinsed
8 corn tortillas
2 cups shredded iceberg lettuce
1/2 cup reduced fat shredded cheddar cheese
1/4 cup finely chopped onion (I used green onion instead)
1/4 cup reduced fat (or fat free) sour cream
Directions
Combine first 6 ingredients in crock pot.
Cover and cook on low for 6 hours. Shred with two forks.
Stir in cilantro and black beans.
Prepare tacos with desired toppings. Enjoy!
