Roasted Garlic Parmesan Butternut Squash

Prep: 15 minutes
Bake: 50 minutes
Serves: 6

Ingredients
2 Tbsp. dried or fresh parsley
2 Tbsp. olive oil
2 cloves of garlic, minced
1/2 tsp. pepper
1 large butternut squash, peeled, seeded and cut into 1 inch cubes
1/3 cup freshly grated Parmesan cheese

Directions
Preheat oven to 400 F. 
Toss first 5 ingredients together in a large bowl.
Transfer to a foil lined baking sheet or shallow baking dish.
Bake uncovered 50-55 minutes, stirring once halfway through. Sprinkle Parmesan cheese over squash for the last 5 minutes of baking. Enjoy!
